Klippfisch je lehce solená ryba, obvykle také treska, která je sušená na slunci nebo na skalách (odtud název "klipp") nebo dřevěných konstrukcích.
"Klippfisch" refers to a type of dried and salted fish, commonly cod, but it can also be made from other white fish. This preservation method, involving drying fish on rocks or wooden frames ("klipp" in Norwegian), dates back centuries and is particularly associated with Nordic countries. The process involves gutting and salting the fish, then leaving it to dry for several weeks. The result is a firm, preserved fish product that can be stored for months or even years. Before cooking, klippfisch usually needs to be rehydrated and desalinated by soaking in water. It’s a key ingredient in many traditional dishes, notably in Portuguese and Spanish cuisines, where it’s used in recipes like Bacalhau.
